bread cane Fearless Leader: you could do a blend Fearless Leader: or do layers Fearless Leader: depending on the bread Fearless Leader: the inside can be white like this Fearless Leader: or you can yellow it, add semolina to your clay mix Fearless Leader: cure and slice while hot for a more mealy sort of bread Fearless Leader: I'll reduce some of this larger bread log and show you how I do the toasty tops, ok? Fearless Leader: want to know the trick to toasty tops? sylsnovelties: I didn't realize we could slice right out of the oven. sylsnovelties: Yes, toasty tops! Fearless Leader: cakes that are layered need to be cut after curing Fearless Leader: or you mash your cake and spoil the frosting Fearless Leader: pizza with cured topping sylsnovelties: ahh, good point. Fearless Leader: can't cut while the bottom and top are raw Fearless Leader: I tried Fearless Leader: didn't work Fearless Leader: what a disaster Fearless Leader: but anyway Fearless Leader: this here white bread Fearless Leader: let's make a loaf Fearless Leader: and give it a toasty top sylsnovelties: ok Fearless Leader: by putting a thin layer of melted cheddar cheese mix on top of the loaf Fearless Leader: my odl and dirty melted cheddar cheese stash Fearless Leader: I use it for everything Fearless Leader: ok Fearless Leader: for this loaf, I'll reduce, form, and then put a slice of the melted cheese on top Fearless Leader: and then show you how to slice the top of the loaf Fearless Leader: for the light layers to show through the slashes sylsnovelties: ok. Fearless Leader: off I go Fearless Leader: see Fearless Leader: thin sylsnovelties: ahh Fearless Leader: hilda brb sylsnovelties: ok Fearless Leader: back Fearless Leader: ok, that thin sheet of melted cheddar cheese mix Fearless Leader: it's going on the top of the loaf sylsnovelties: ok Fearless Leader: and it'll be smeared down the sides for a fourth of the way Fearless Leader: like where the bread is sticking up out of the pan, that far Fearless Leader: ok? sylsnovelties: ok Fearless Leader: now to slice the top Fearless Leader: then Fearless Leader: you smear that toasty tip Fearless Leader: top Fearless Leader: into the cuts there sylsnovelties: Would you look at that! Fearless Leader: on the top Fearless Leader: like this sylsnovelties: Oh, I see what you are doing!!! jude: Look at that! Fearless Leader: ok, let's say we want dinner rolls Fearless Leader: take some bread cane Fearless Leader: and mash it like this Fearless Leader: we're going to use the circle cutters to get our rolls Fearless Leader: but not before Fearless Leader: TOASTY TOP sylsnovelties: ahh Fearless Leader: the thinnest setting Fearless Leader: see how thin Fearless Leader: I'll stretch it more Fearless Leader: we're looking for a light toasted look Fearless Leader: and the translucent clears up a lot after curing Fearless Leader: so go thin and it won't even look like you added this layer sylsnovelties: ok Fearless Leader: so I'm going to put this sheet of toasty top Fearless Leader: on this mashed bread cane Fearless Leader: and look for the right sized cutters Fearless Leader: eeep jude: eep? jude: eeep? Fearless Leader: my work area is a disaster Fearless Leader: and I couldn't find my cutters jude: Oh, more like an egads! Fearless Leader: I found them now sylsnovelties: thank goodness you can't see mine. jude: Mine is pretty messy, too. jude: sign of a good worker. Fearless Leader: see how thin that toasty top is? sylsnovelties: Sure is. What color is the cheddar cheese mix? Fearless Leader: melted cheddar cheese Fearless Leader: not unmelted Fearless Leader: different color that Fearless Leader: I'll cut you a dinner roll that is slightly larger than usual Fearless Leader: so you can see sylsnovelties: ok jude: See the mark the cutters leave in the center? sylsnovelties: yeah Fearless Leader: now smear the toasty top down the sides, ya but we're cutting a cross on this bun jude: Mine do that. Ticks me off. Fearless Leader: so it's no matter jude: Okie. sylsnovelties: Jude, when it leaves that center mark, you could cut that out and make a donut! jude: LOL jude: Hot cruss buns. jude: er...hot cross buns sylsnovelties: ooh, criss cross bread! jude: Oh, neat...braided loaf. Fearless Leader: then smear the toasty top down the sides Fearless Leader: smear it down on all sides Fearless Leader: let some of the light show through Fearless Leader: but not much Fearless Leader: just a hint of white bread inside Fearless Leader: heavier toasty top on top sylsnovelties: Yummy Fearless Leader: less as it goes down the side of the bread loaf sylsnovelties: what color mix is in the melted cheddar? Fearless Leader: it's a touch of brown, more of orange, tons of translucent sylsnovelties: ok, thanks! Fearless Leader: now if you have some left over translucent mix Fearless Leader: that would look like candied fruit Fearless Leader: red, yellow, green Fearless Leader: that sort of thing Fearless Leader: cure them Fearless Leader: and then sprinkle them on a braided loaf like this Fearless Leader: for panetone sylsnovelties: oh, good idea Fearless Leader: that braided bread is a bit of a hassle, but it's well worth it |
