Trick here... that melted cheddar cheese mix, make a bullseye with that as the surround and inside have your bread mix (white with a touch of raw sienna). Take that bullseye and flatten it, cut into sections, stack and flatten again, do that until you get as many lines as you'd like on your croissant. Pinch the top of the stack to make the triangle, reduce to the size you want to roll up and roll up some croissants. That melted cheddar cheese mix simulates toasty bake brown and a bit of the butter in between the layers of bread dough.
