2002 Sushi, Noodle and Dim Sum Getting the gray brown color for the soba was an interesting experience. Thank goodness for real soba sites online to check for accuracy. I was concerned with the white thick udon noodles, they have a translucency, and a sheen. So it's white, pearl and translucent with a touch...just a touch of soba brown. Without that touch the noodles are too white.
